I'll start with - I know how to sharpen knives. I purchased the Knive Care Kit to take care of my Wüsthof collection and I now have to take my knives to the hardware store for re-sharpening. The Wüsthof kit made my knives dull and even chipped a section out of my wonderful Chef's knife. I expected much more and ended up disappointed with somethin I can't use...
Description of Wusthof Long-Term Knife Care Kit
Maintaining the blade edges of world-class Wüsthof knives protects the lifetime investment these kitchen instruments represent and keeps them at their most useful. This kit provides essential tools for proper care. Central to the kit is a honing tool consisting of a wood handle and ceramic wheels. Holding the tool with the left hand and drawing a knife several times between the wheels with the right hand hones the blade edge, which is the final step in a professional sharpening process. (A sharpening steel only realigns an edge, which is also essential to knife care.) Using the honing tool prolongs the period between full sharpenings. Accompanying the honing tool is a FZ brand towelette for polishing a stainless-steel knife blade (the towelette polishes other metals, also), and a soft, cotton hand towel (11-1/2 by 18 inches) for wiping the blade after polishing.
