This is a very good, very sharp knife, but one thing that struck me as odd was that the Wusthof logo on the knife is only a sticker, which comes off on the firts wash...that seems pretty cheap for [this]knife. But other than that, it is a good knife.
Description of Wusthof Gourmet 8-Inch Flexible Fillet KnifeA Wusthof Gourmet stamped knife is great for newer cooks or for use in a second home. These value priced knives are quite sharp. Thanks to their high-carbon stainless steel, their sharp edge is long lasting. Triple riveted handles are extremely durable. Hand wash only. Lifetime warranty from Wusthof with normal use and proper care. Made in Solingen Germany. This flexible fillet knife moves with you, making it easier to guide it around the fish's head and tail and close to the fish's skeleton for better filleting. Part of Wüsthof's Gourmet series of knives, this 8-inch fillet knife is a less expensive version of the knives in the manufacturer's Classic series. Although the blade is still made of high-carbon steel with a stain-resistant alloy, the difference is that the blade is a thinner quality metal and is cut by a precision laser instead of by hand. The blade still has an ideal shape as it is ground and polished by computer to ensure perfect tapering from tip to bolster. Full tangs extend through the synthetic traditional-style handles, which are triple-riveted for strength. This knife is dishwasher-safe but hand washing is recommended to preserve the edge on the blade. The Gourmet series is an excellent alternative for those who want to own quality Wüsthof cutlery but are on a budget. --Cristina Vaamonde
