A fine complement to honing steels, this ceramic and wood knife sharpener from Wüsthof restores blades to a keen edge with minimal effort and fuss. The concept is simple: grip the handle, brace the base against a countertop, and pull the blade through the refined ceramic grinding wheels. The wheels sit deep in the block to help ensure safety, and the base is quite stable, with minimal side-to-side movement. The sharpener is straightforward and easy to use and includes a scalloped grip in the wooden frame. Because the wheels interlock and overlap, they turn easily, so sharpening only takes about a half dozen swipes. As a note to left-handers, the tool is built only for right- handed use. --Emily Bedard
