Customer Review: The BEST of the best of the Santokus

Everything comes together perfectly in this Wusthof Classic Santoku, from the fit of the handle to its overall balance (it doesn't tip out of your hand when you relax your grip) to its ability to hold a great edge while being easy to resharpen. Having spent 20 years cooking Chinese, I've used every major brand and variant, and the top two really stand out for good reason:
-- (1) Wusthof Classic Hollow-Ground Santoku (balance, fit, quality steel, tested design, a tough knife)
-- (2) Victorinox Cutlery 7-Inch Granton Edge Santoku (great value, extremely sharp, comfortable grip)
-- (3) J.A. Henckels Twin Pro S 7-Inch Santoku Knife with Hollow Edge (only one flaw: it's unbalanced!)
-- (4) Mac Pro MSK-65 6.5" Santoku (Wonderful, but made of tungsten alloy which easily rusts)
Unlike many knives, Wusthof uses a bolster on the handle to push the blade's butt away from your hand, allowing you to use the full length of the blade through long cuts. When you're ready for a quality kitchen knife, you might find yourself using this one more than 50-70% of the time, and for that reason you should choose this 7-inch Classic Wusthof Santoku. You can thank yourself later. Sold also at Bed, Bath, and Beyond: just make sure you're buying the right one and not a cheaper version of the same knife. If you go with a gift or value Santoku, consider the Victorinox Granton Edge. It gets great reviews because it's a tough knife that lasts longer than you ever expect it to.
Description of W?sthof Classic 7-Inch Hollow Edge Santoku Knife
Originally from Japan, this knife is quickly finding a following among American chefs. The curvature of the cutting edge offers great opportunity for rocking the blade while slicing and dicing. An excellent choice for cutting vegetables and meats into slices or cubes. This blade can cut paper thin slices, a great benefit to those who adore sushi and sashimi and the hollows within the blade keep food from sticking to it.Tough polypropylene handles with full, visible tangs and the traditional three rivets distinguish Classic knives from W?sthof's other cutlery lines. Otherwise Classic knives are identical to other W?sthof knives, embodying all the virtues that have earned the German manufacturer world renown. The principal parts of a W?sthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. The blades and beautifully formed bolsters are not as thick as on some knives. As a result, despite their heft, strength, and durability, W?sthof knives are pleasingly delicate and marvelously balanced in action.
This 7-inch santoku is a Japanese cook's (or chef's) knife, featuring a low-tip style with a broad blade. The cutting edge is minimally curved, so it provides less rocking action than a European-style cook's knife. For straight-down slicing and precise chopping, however, it's superb. Alternating hollows on each side of the blade create air pockets, allowing slices to fall away cleanly. This knife should be hand washed. --Fred Brack
